So, why don't more people do a postdoc then? There are PLENTY of 2-year postdocs that are as well paid. Why do HSF, just because it's three years? Harvard offers many postdocs. So does Stnaford, etc.
Why do people go for AP jobs if we just agreed that postdocs are better?

As usual, it depends. In europe, it is much more common to do a post-doc, thus, nobody will consider it as a negative signal if you do one.
In the US, it is more common to pick up a TT-job after graduation and a post-doc carries a negative signal to many academic employers, unless it is a prestigious post-doc.

also depends on goals. the MDs of the world have a shot at being legitimately elite researchers, and 3 years to focus exclusively on that early on is invaluable. but almost everyone else will be respectable researchers at best, and other aspects of academic life will be important, and we may care about pay early on.

How much does HSF pay, I'm guessing ~80k? I can understand MD choosing to do this, since teaching any one given course might not help given her research interests. If I was in her place though, if I could negotiate a 1-1 load teaching only grad students, it would probably help with my research.

There is a general shift towards doing more postdocs in general.
But that said, HSF isn't really a "postdoc". Or if it is, it is the most prestigious one by orders of magnitude. For example, I imagine the day-to-day life of a HSF and NBER postdoc are pretty similar, but the expected career path is quite different.
