Why would your reviews matter, unless you are at vvvlrm and looking for a lateral move? Otherwise, quality of your work will speak for itself and your writer can say something about collegiality. Since you are few years out, you might have some good teaching evals too. At this point, market is clearing, you cannot be non-selective even if you wish to be non-selective for whatever good reasons.

I can, and will, ask for one letter from my closest coauthor, but I think that letter will be discounted somewhat - based on my direct experience on search committees. At the same time, I'd feel very bad to ask people to upload letters if I ended up applying to a ton of places. So what's the appropriate number of apps I should be targeting?

Be selective in the sense of your research match but otherwise apply broadly, mix SLAC/LAC with Research schools. If you are HRM, spread through grapevine too. Ask for a letter from your trusted colleague in your department. Other two can be from your co-authors outside the dept.

Uploading and sending LORs is part of the job. Yea it’s annoying but it’s like complaining about having to teach on Monday morning. I’d rather not have to but it’s my job so whatever.
Don’t change the # of applications to try to appease your letter writers.
You can ask your advisors in the past. They will be better than your co-authors if they are junior economists. More importantly, places that you should target depend on your output. Unless you have one top 5 and a number of field top journals, then it will be really hard to find a new place.
What are your pubs. If lor are important really depends on pubs.
LOR are only marginally useful for JMCs and unless unless the LOR writer is best buds with someone influential where you’re looking
The only thing a LOR signifies is that you found someone that may not think you are a complete terd

AP jobs require them. You are applying for the same position as fresh candidates, so you need letters just like they do.
